Objectives

Acquisition of knowledge, ability and proficiency concerning (1) the risks associated to the exposure to food toxins; (2) the mechanisms of food toxicology; (3) endogenous and exogenous factors which could be responsible for different individual susceptibilities to food toxins, particularly in what concerns to modulation of chemical toxicity by the several dietary components; (4) the new methodologies which are been developed for toxicity evaluation and for risk analysis.

Subject matter

1. Toxicity of the traditional and new foodstuffs and of the food contaminants. Non-organ-directed toxicity (chemical carcinogenesis) and target organ toxicity (liver, kidney and nervous system)

2. Endogenous factors of individual susceptibility to food toxins. Influence on absorption, distribution, biotransformation, excretion and interaction.

3. Exogenous factors of individual susceptibility to food toxins. Influence on absorption, distribution, biotransformation, excretion and interaction.

4. New methodologies to evaluate toxicity: new in vitro and in silicio methodologies. Introduction to the toxigenomic techniques in the toxicology and risk analysis. Approaches for the development of biomarkers of exposure and effect.
